If you've been around the blog for a minute, you have probably heard me mention that last year when I was preparing for my wedding, I did the Keto diet for about six months to lose weight and look my best for my big day.
Keto was something I had a hard time sticking to in the beginning just because I'm a huge sucker for bread and sweets and the Keto diet is a high fat/protein diet with very little to no carbs. I bought a cookbook to help and found a bunch of other resources like Facebook groups and Instagram Keto gurus and eventually got into the swing of things.
I love pizza. My husband worked at Papa John's for a while and I got really used to eating pizza like four times a week. And he wonders why I blame him for me gaining 40lbs in the first year after we started dating.
You can't have pizza on Keto because it has way too much carbs and way too much grease. The cheese and the toppings are fine, but it's hard to order a pizza from a pizza place with no crust. Try it, you're gonna get some funny looks.
Back when I used to work at a summer camp/year-round retreat center, one of the directors made these mushroom pizzas all the time. She would every now and then give me one, and I actually really liked them. When I started Keto, I remembered that she made them, but I couldn't remember what she put on them and every recipe I found online either my husband didn't like or it was just way too damn complicated for a mushroom pizza.
So I came up with my own!
I ate this a lot while I was doing Keto and still make it pretty frequently. Mostly, I've just realized that I'm not a big fan of regular pizza anymore because it's so heavy and greasy and I always feel really sick and gross after eating it. This is a great alternative because it still taste/feels like pizza, but it's so much better for you.
This is a super wonderful meal that you can either make for yourself or for the whole family when you want something light but still filling. Plus it's a great meal for those colder fall days, which we should hopefully be having more of soon.
Portabella Mushroom Three Cheese Pizza
Serves 2-3 people
Ingredients
4 Portabella Mushroom Caps
1 cup marinara sauce
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
½ cup shredded parmesan cheese
Garlic powder
Oregano
Basil
Canola Oil
Preheat your oven to 350 degrees. Then get out a cookie sheet and either spray with cooking spray or line with parchment paper.
Start by scooping out and removing the stems of the mushroom caps and then quickly wash them before brushing the top of the mushroom with oil. Place top side down on the cookie sheet.
Next spread about a ¼ cup marinara sauce on top of each of the mushroom caps. Make sure to cover the entirety of the mushroom so it cooks evenly. Sprinkle about 1 tsp of garlic powder evenly over each mushroom.
Take about ¼ cup mozzarella cheese and sprinkle on top of the spaghetti sauce along with ⅛ cup each of the feta and parmesan cheese.
Top with oregano and basil before placing in the oven for about 20-30 minutes (the bigger the caps, the longer they’ll need in the oven.) before removing. Let sit for about five minutes to cool.

Take a shot for that one time when I burned all of my mushrooms caps and couldn't make these for dinner and toast to finder healthier alternatives to food we all love.

Love this! I’ve made these before and I’ve also done it with eggplant slices! Both still give me the ~illusion~ of pizza but without all the extra bad stuff! Great idea 💕
